Salpebrem els talls de pollastre i els daurem, amb l´oli ben calent, a la cassola fins que estiguin ben rossos, uns cinc minuts màxim per banda.

Pas 2

Fem un sofregit de ceba i tomàquet. Primer la ceba, a foc lent, tallada a dauets, fins que estigui ben poxada, fosca, una mitja hora llarga tranquilament. Millor tapat. Tot seguit hi afegim el tomàquet, sense pell ni llavors i tallat a daus. Tornem a tapar. Quan el tomàquet es comenci a desfer ho mullem amb el vi ranci, deixem que s´evapori l´alcohol i passem al següent pas.

Recuperem els trossos de pollastre, ja amb el sumak com si ho estiguèssim salpebrant, hi afegim les llavors de cilantre prèviament matxacades al morter i ho deixem coure-ho, tapat,  uns vint minuts.

Passats aquests darrers 20 minuts mirem que la salsa tingui la consistància adequada, ni massa espessa ni massa líquida, ho tastem, rectifiquem si cal de sal i pebre i ho servim acompanyat d´un bon vi blanc amb barrica com elq ue recomenanem en aquesta ocasió, un magnífic Lanius del celler Alta Alella. Un bon cava, gran reserva, sempre serà també una bona opció.
